La bodega AGUSTÍ TORELLÓ MATA es conocida por la calidad de sus CAVAS, pero también es una bodega inquieta que le gusta experimentar con las variedades autóctonas de la zona como ya hizo con la variedad Trepat y su magnífico cava Rosado.
Por ello, y a modo de prueba, plantaron en 1999 un viñedo de Subirat Parent a más de 750 metros de altitud y siguiendo las normas de laviticultura ecológica.
El resultado es este interesante vino:

Variedad: 100% Subirat Parent. Finca Obac d ́en Palà Parcela 12 (D.O. Penedés)
Vinificación:
Maceración pelicular en frío durante 12 h. y fermentación en inoxidable a 16ºC durante 21 días.
Ficha de Cata:
Vista: De aspecto limpio y brillante, presenta un color amarillo pajizo de intensidad media con reflejos de oro nuevo y lágrima fina.
Olfato: Franco, intenso y complejo, destacan los aromas florales como el azahar, y de fruta tropical como el albaricoque, la piña y el melocotón de viña, sobre un fondo muy mineral.
Gusto: Fresco y muy afrutado. De cuerpo medio, en boca es muy mineral y ligeramente salino, donde destaca sobretodo la acidez, que le aporta frescura.
Intenso y complejo en aromas, domina sobretodo el melocotón de viña, fino y elegante, con un post-gusto medio y un final ligeramente amargo y muy agradable, que le confiere viveza y frescura.
Maridajes:
Ostras, mariscos y arroces.
Pescados suaves y azules.
Cocina oriental.
