Desde hace más de una década GOUTHIER selecciona e importa ostras de la costa atlántica francesa. Ostras de diferentes caladeros, tanto del de Marennes Oléron como del de Normandía.
Hay dos tipos de ostras, la ostra plana (Ostrea Edulis) y la ostra hueca (Crassostrea Gigas). Antiguamente, en la zona de Marennes Oléron se cultivaba la ostra plana, pero tras varias epidemias que diezmaron los cultivos, fueron sustituidas por la ostra hueca.
Los "Claires" en Marennes Oleron
La zona de Marennes Oléron es un caladero con un ecosistema único. Situada en la costa atlántica del suroeste francés a unos 150 Km. al norte de Burdeos es una bahía donde desembocan tres importantes rios y que está resguardada del mar abierto por la isla de Oléron de 40 Km. de longitud.
Los Claires donde se afinan las ostras son balsas de poca profundidad, antiguas salinas de tierra arcillosa donde la influencia de las constantes mareas y de las aguas dulces de los tres ríos que allí desembocan, generan un peculiar ecosistema que enriquecerá y personalizará aún más el sabor de las ostras.
En estos Claires se cria un alga llamada “Navicule Bleu” que al ser filtrada por la ostra (una ostra filtra unos 7 litros de agua por hora) le da ese peculiar color verde turquesa.
La ostra GOUTHIER es dulce pero equilibrada, con un gusto marino, apenas salado, carnosa e incluso muy carnosa, pero de carne delicada, firme y suave al mismo tiempo.
